Instant soups for a wholesome Winter

When it comes to the cooler months, there’s nothing worse than having to leave your warm office, face the brisk winds and trek to a cafe to get a nutritionally questionable lunch. In an ideal world, we would all have enough time to prepare delicious and nutritious food every night before work, but often snuggling up next to the heater and getting take-away is a much more appealing prospect.
Regardless of how much time you have, staying healthy without forfeiting precious time or money can be simple if you know what to do. We’ve created three delicious instant-soup recipes to get you through the winter months without straining your wallet or your watch. All ingredients are interchangeable, with the same easy directions to follow each time!
Zucchini noodle ramen
100g of firm tofu, cubed
1 medium zucchini, spiralised
1 boiled egg
1 spring onion, thinly sliced
1 teaspoon sesame seeds
1 ½ teaspoons of miso paste
1 – 2 teaspoons of vegetable stock base
1 teaspoon of sesame oil
½ teaspoon fresh grated ginger
1 tablespoon soy sauce
Chicken Pho
1 – 2 teaspoons of chicken stock base
½ cup cooked shredded chicken
30g rice vermicelli noodles
20g bean sprouts
½ teaspoon fresh grated ginger
½ long red chilli, thinly sliced
1 spring onion, thinly sliced
½ small star anise
¼ lime
Fresh coriander leaves, to taste
Fresh basil leaves, to taste
Thai Prawn Laksa
30g rice vermicelli noodles
4 – 5 cooked prawns, de-shelled
¼ cup sliced button mushrooms
1 spring onion, thinly sliced
1 – 2 teaspoons of chicken stock base
1 teaspoon brown sugar
2 teaspoons Thai Laksa paste
1 teaspoon sriracha
1 teaspoon fish sauce
¼ cup coconut milk
¼ lime
Fresh coriander leaves, to taste
Step 1:
Assemble a Mason jar or sealable container with your ingredients. Start with wet ingredients at the bottom, followed by the main ingredients with garnishes sealed in a plastic zip bag on top. Keep refrigerated until ready.
Step 2:
When ready to eat, remove garnishes and fill your container with 2 cups of boiling water from your Zip Hydrotap, or until the water covers all ingredients. Close the lid, and leave for up to 4 minutes for the ingredients to cook and soften.
Step 3:
Add your garnishes, stir, and enjoy!
